Overnight Blueberry Bran-Ana Muffins
2 1/3 cups All-Bran cereal
2/3 cup boiling water
1/2 cup sugar
1/3 cup vegetable oil
2 eggs, slightly beaten
2 ripe bananas, mashed
1 2/3 cups whole wheat flour
2 teaspoons baking soda
1 1/4 cups buttermilk
1 1/2 cups blueberries
Mix cereal with boiling water and let stand. In small bowl, mix
sugar, oil, eggs bananas, and
buttermilk. Add to bran. Mix flour and baking soda. Fold into batter
along with blueberries. Let stand overnight or up to three days in covered
container in refrigerator.
Preheat oven to 400 degrees.
Fill lined or greased muffin tins two thirds full. Bake 20 minutes.
Cool on wire rack. Makes 2 doz.
