No Bake Oreo Cookie Cheesecake

     
    I think I will trade in my carrots for this one!!!
    ---
       1 1/4  c.  choc. crumbs
       4   Tbsp.  butter or marg.
       2   c.  whipping cream --  divided
       3   250 gr. pkg.  cream cheese softened (24 oz)
       1  c.  sugar
       1 1/4  lb.  cream- filled choc. cookies divided -- (about 54)
       4  sq.  semisweet chocolate
    1/2  tsp.  vanilla
     whipped cream for garnish

    Combine crumbs and butter; press into the bottom of a 9 or 10 in springform pan.  Freeze.  Whip 1 1/2 c. whipping cream until stiff peaks form, refrigerate.  In a large mixing bowl, beat cream cheese until smooth.  Gradually add sugar, blend thoroughly.   Break 38 cookies, each into 3 pieces, fold into filling along with whipped cream.  Spread evenly into pan, over crust. Cover and chill for 4 hr.. or overnight.   Meanwhile, melt chocolate over hot water, cool slightly whisk in vanilla and remaining whipping cream.  Loosen cheesecake from pan, by running a knife around edge, remove from pan.

    Glaze the cake with the chocolate mixture, covering the top and sides.  Put back in fridge until glaze hardens, about 1/2 hr.   To serve, cut into 16 pieces, top each piece with a dollop of whipped cream and a whole cookie standing upright!
