Pink Lemonade Ice Cream Cake

    What a great summer Birthday Cake idea!!

    This is two layers of yellow (or white or chocolate) cake with a
    lemonade flavored ice cream center. Wonderful on a hot day.

    1 (18.25 ounce) box yellow cake mix
    1 quart vanilla ice cream
           6 drops red food coloring
     1 (6 ounce) can frozen pink lemonade concentrate, thawed
     2 cups whipping cream
     2 tablespoons white sugar

    Prepare cake mix according to package directions for two 9 inch
         round cake pans. Bake then cool. This can be made days ahead, and
    carefully wrapped and frozen.

     Stir ice cream to soften, stir in food coloring and 1/2 cup of the
    lemonade concentrate.  Spread ice cream mixture evenly in a foil lined
    9 x 1 1/2 inch round cake pan. Freeze until firm about 2 to 3 hours or
    overnight
    ---
    The morning of serving, remove cake from freezer to thaw,(or make cake fresh).
    Later in the day, arrange one cake layer on a serving plate, top with ice cream layer
     then top with second layer of cake. Put assembled cake, well covered,
    back into the freezer.
    Frosting: Beat the whipping cream with the remaining
     lemonade and sugar until fluffy and peaks form. Frost sides and top of
    cake with whipped cream mixture.
    Return cake to freezer for at least one hour before serving.

    Makes 1 - 9 inch round layer cake.
    Note: you don't want this frozen too solid or the cake layers will be too frozen to eat.
