Green Rice

          where's the parsley??

        This comes from Eilene, her mother used to make this recipe when
        she was in charge of a catering department.
             
            Serves 50

            10 cp uncooked rice
            water
            5 cp grated cheese
            1 1/4 cp butter
            5 cups ground parsley
            2 1/2 cp chopped finely chopped green peppers
            1 1/4 cp chopped onion
            2 1/2 cp milk
            20 egg, divided

           
        Cook rice in water according to package directions, drain well and
        put in large container.  Add the next 6 ingredients and mix well.  Beat
        the egg yolks and add them, mix well.   In another container beat the
        egg whites until firm, fold into the other mixture.

        Turn into large greased pan (or divide up into smaller pans) and bake for 45 - 50 min. at 350 deg.  Slice and serve.
