Suzanne's Green Macaroni Salad
2 pounds of tiny shell pasta
1 bunch scallions
1 10 oz. bag of spinach
1 amt mayonnaise
1 lb. frozen peas, thawed
While cooking pasta, peel and clean carrots. Place carrots,
scallions and spinach in food processor, (you may need to do in batches)
process until very fine, Add the veggies to the drained pasta and
combine with Hellman's Mayo to taste ( I use Hellman's light).
Add 1 16 oz package peas (defrosted) Add salt and pepper to taste.
The dressing with the chopped veggies will look green.
NOTES : Everyone loves this salad, but few can tell exactly what
is in it! ENJOY!!
