Vegetable Casserole

    All my favorites in one dish!

       3   c  cauliflowerets
       3  c   sliced carrots
       3   c   broccoli florets
       1   c    mayonnaise
         1/4  c   finely chopped onion
       3  Tbsp   prepared horseradish
        1/4  tsp   salt
         1/8  tsp   pepper
         1/3  c    dry bread crumbs
       2   Tbsp   melted butter or margarine
         1/8  tsp   paprika
    ---
    ** This may be far too much if you are not a horseradish fan, either start with
    1 tsp. and go to taste, or leave it out.

    Place cauliflower and carrots in large saucepan, add a small amount of water, cover and cook for 3 minuts. Add broccoli, cook 4-6 minutes longer or until veggies are crisp tender. Drain. Combine mayonnaise, onion, horseradish, salt and pepper; add veggies and mix well. Pour into a greased 2-qt baking dish. Combine bread crumbs, butter and paprika; sprinkle over veggies. Bake uncovered, at 350 degrees for 25-30 minutes or until heated through. Serves 12-14
