Hundreds of Chocolate Chip Cookies

    Makes 600 x 2oz cookies or 300 x 4 ounce cookies.
    ---
    10 1/2 Pounds Granulated Sugar
    7 1/2 Pounds Light Brown Sugar
    12 pounds butter, unsalted
    2 ounces Vanilla extract
    6 ounces salt
    6 ounces baking soda
    3 quarts whole eggs -- Shell removed
    18 pounds pastry flour -- Sifted twice w/ soda
    5 pounds pecan pieces -- chopped
    15 pounds chocolate chips

    Cream granulated sugar, brown sugar, vanilla and butter for 20 minutes.
    Add eggs at room temperature and mix for 5 minutes. Scrape bowl.
    Sift flour twice with baking soda. Add remaining dry ingredients.
    Just incorporate thoroughly. Don't overmix. Scrape bowl.

    For small cookies portion with small scoop
    For large cookies portion with a larger scoop.
    ---
    Bake at 335 for 10 - 12minutes or till edges are golden brown.
    Do not overbake. Cookie will become too hard.
