Alfredo Sauce
for 50
This
recipe makes about 50 servings, so when serving 150 or 200,
make 3 or 4 separate batches.
It
is just too difficult to make a successful Alfredo sauce in one large batch.

lb. butter
10
cloves garlic, minced
1
lb. flour (approx. 4 cups, depending on humidity, maybe slightly less)
2
litres heavy cream (whipping cream)
1
liltre whole milk
1
½ lb. freshly grated parmesan cheese
Fresh
black pepper to taste
Melt
butter in a 40 litre pot. Add garlic,
and sauté for 1 minute, then stir in 1 lb flour to make a roux.
Slowly
pour in 3 litres heavy cream and 1 litre whole milk and stir with a whisk until sauce begins
to thicken.
Add
1-1/2 lbs freshly grated parmesan cheese and stir well. Add fresh cracked black
pepper to taste and
test
for salt.
