Seven Layer Salad for 50

          3-1/4 heads iceberg lettuce, washed
          6-1/4 cups bottled real bacon pieces
          6-1/4 medium green bell peppers, seeded and chopped
          6-1/4 small onions, chopped
          4 lbs. frozen peas, thawed
          2-1/4 lbs. celery ribs, chopped
          2 lbs. carrots, peeled and shredded
          6-1/4 cups shredded cheddar cheese
          2 quarts plus 1 cup mayonnaise type salad dressing
          1-1/2 cups sugar
          6-1/4 cups croutons
    ---
     Prepare the day before serving. Arrange lettuce in the bottom of a deep baking
     dish(s) or plastic container with a cover. Sprinkle with
     bacon pieces. Layer with remaining vegetables and sprinkle with cheese.
     Combine salad dressing and sugar in a bowl. Spread
     over top of salad so it is air tight. Cover and refrigerate until
     serving time.
    Just before serving, toss and add croutons, if desired.
