Easy Ice Cream Yule Log

    1 1/2  qt.  (about 6 c.) cherry, chocolate, vanilla or your choice of ice cream
    1 envelope dessert topping mix
    peppermint flavoring
    green food coloring
    1 c. whipping cream
    1/4 c. sifted icing sugar
    1/4 c. cocoa
    1/4 tsp. vanilla
    pinch of cinnamon
    toasted slivered  almonds
    small plastic holly or poinsettia for decoration, or whatever
    ---
    Remove ends from two (14 oz) cans.  Stand upright and fill with firm ice cream
    (any flavor you would like), pressing down well with the back of a warm
    spoon.  Cover and freeze overnight until very firm.
    Wrap with a hot wet cloth and unmold. Return to freezer to firm up again.
    Prepare dessert topping as per package instructions, add peppermint to taste
    and a few drops of green food coloring. Press ice cream rolls together end to end, and cover with mint topping.  Return to freezer.
    Beat whipping cream until partially still and beat in icing sugar mixed with cocoa.  Flavor with vanilla and a pinch of cinnamon.  Cover ice cream roll thickly with cocoa cream frosting.  Rough with a fork and sprinkle with toasted slivered
    almond.  Garnish with holly or whatever.  Return to freezer, freeze until firm.

    Then carefully wrap in foil to store for several days.  Makes 8 servings.
