Turkey Bread Stuffing

    ---
    (for 20-25 lb. bird)
     ---
     2 loaves of stuffing bread, crumbed or cubed
    (use day old bread, some whole grain too)
    1/4 cup parsley
    1/2 teaspoon celery salt
    1 teaspoon salt
     2 tsp. poultry seasoning
    1/8 tsp. ginger
    1/4 c. butter
    1/2 cup freshly chopped onion, sautéed in butter
     1/2 cup freshly chopped celery, sautéed in butter
    2 cups turkey or chicken stock (can used canned broth)
    ---

    Combine dry ingredients; add onion, celery and butter.. Add stock and mix to desired
    consistency. Use additional stock if necessary. Fill bird. Place bread slices or extra skin
    from neck of bird over stuffing to retain moisture.
