Deluxe Broccoli with Onions


    1 lb. fresh broccoli or large head
    3 to 4 medium onions, quartered
    4 Tbsp. butter or margarine
    2 Tbsp. all-purpose flour
    1 c. milk
    1 (3 oz.) pkg. cream cheese
    2 (oz.) yellow American cheese, shredded
    1 c. soft bread crumbs

    Slit broccoli spears lengthwise; cut into 1-inch pieces. Cook in boiling salted water
     until crispy-tender. Drain. Cook onions in boiling, salted water until crispy-tender; drain.
     In saucepan, melt 2 tablespoons butter; blend in flour, 1/4 tsp. salt and dash of pepper.
     Whisk in milk; stir and cook until thick; add cream cheese; blend until melted and smooth. 
    Toss vegetables lightly with white sauce in 1 1/2 quart casserole. Top with American cheese. 
    Cover and chill. Melt rest of butter; mix with crumbs. Cover and chill. Bake at 350 degrees for 30 minutes. Sprinkle crumbs around edge. 
    Bake uncovered 30 to 45  minutes. Serves 6.

    NOTE: I triple this, it's so good. Can be frozen, defrosted to bake.
